Our certified organic garlic is planted in the fall and covered with a thick layer of mulch. Springtime brings a period of hand-weeding removal before the July harvest. We rotate our fields and utilize cover crops to provide the best soil conditions and disease control. Only natural sources of fertility are applied. Our Certified Organic Varieties:
Bogatyr var. Marbled Purple Stripe
Beautiful marbled purple, compact bulbs, consistently large with brown clove wrappers. Originated in Moscow. For lovers of spicy garlic, this is one of the hottest! Initial bite finishes with a pleasing garlicky aftertaste. 5-7 cloves per bulb.
Georgian Crystal var. Porcelain
Large cloves are great for roasting with their smooth, buttery consistency. Nice garlic flavor when raw with a touch of heat. Originally from the Republic of Georgia. Beautiful bulbs with pink clove wrappers. Stores well. 4-6 cloves per bulb.
Music var. Porcelain
Easy to grow, reliable, vigorous producer of large bulbs with plump, pink cloves. Sweetly pungent and a good variety for many uses, but especially fresh eating. A great choice for salsa! Brought to North America from Italy by Al Music. 4-7 cloves per bulb.
Persian Star var. Purple Stripe
Originated in Samarkand, Uzbekistan. This beautiful variety is the best all-purpose garlic, and our favorite for roasting. Cloves are smaller and more numerous than our other hardneck types. 8-12 cloves per bulb.
Russian Giant var. Porcelain
Large purple tinted bulbs with easily peeled tan cloves have a mild, but pleasing flavor. Plants and bulbs can achieve a large size. 4-7 cloves per bulb.
Transylvanian var. Artichoke
Mild, but flavorful. Brought to the U.S. from a Romanian vegetable market in the 90s. Long storing. 10-20 cloves per bulb.

Garlic is graded by size and sold first-come, first-served starting with the largest bulbs. We sell only the highest quality. If we wouldn’t plant it, we won’t sell it.

Hi. We saw you at the Minnesota Garlic Festival today but we didn’t want to take any garlic because we were going other places and didn’t want to leave it in the car. We have decided that we want to try planting garlic this year. I have a few questions. Does garlic cross polinate? Should I just plant one kind or can I plant several kinds next to each other? I am also wondering how much to plant. We are all garlic lovers and I want to plant enough to supply about 6 families. Can you give me any suggestions? I am looking at music and Bogatyr. I don’t expect to hear from you until you get home so there is no hurry. I am assuming that we would plant in central Minnesota about the middle of September? Thank you for your help.

Hello! We will have garlic available for sale probably end of August. We are just now beginning the harvest; it’s a little late this year. We also do garlic braids of varying sizes and garlic scape pesto, which is sold frozen and when thawed can be eaten on pasta, sandwiches, chicken, pizza, steak-virtually anything! We are on localharvest.org and have a website http://www.prairiegarlic.com linked to our store on localharvest. I will be updating the store when we have garlic available. Current pricing is listed on our website. Unfortunately, we don’t currently grow any other produce for sale currently. We do ship garlic and braids and will be vendors at the MN Garlic Festival in Hutchinson on August 13.
